I’ve been eating these These Chocolate Oatmeal Sunbutter No-Bake Cookies are the for as long as I can remember. It was one of the first desserts my mom made for me when I was a kid and it’s now one of my daughter’s favorite cookies now too.
The traditional recipe calls for peanut butter instead of Sunbutter, but when our youngest daughter was diagnosed with an anaphylactic allergy to peanuts, we were forced to rethink our recipe to include safer ingredients. Enter Sunbutter. Similar in texture and taste to peanut butter, Sunbutter was the perfect substitute for the peanut butter in our cookie recipe.
Ingredients for Chocolate Oatmeal Sunbutter No-Bake Cookies
- Sugar
- Milk
- Cocoa Powder
- Butter
- Vanilla Extract
- Sunbutter
- Oatmeal
Kitchen Equipment You’ll Need for Chocolate Oatmeal Sunbutter No-Bake Cookies
- Measuring spoons
- Measuring cups
- Heat resistant spatula or cooking utensil
- Heavy bottom pot
- Parchment paper
How to Make Chocolate Oatmeal Sunbutter No-Bake Cookies
Gather all of the ingredients and lay enough parchment or wax paper out to hold approximately 2-3 dozen small or 1-2 dozen large cookies.
In a large heavy bottomed pot, combine 2 cups of sugar, ½ cup milk, ¼ cocoa, 1 stick of butter.
Bring to a rolling boil and once it begins to boil, time for 5 minutes.
Remove from heat and quickly stir in vanilla, Sunbutter, and then oatmeal (in that order).
With a spoon or cookie scooper, drop small balls of the cookie mixture onto wax or parchment paper.
Allow them to cool and enjoy!
