How to Make Loaded Tex-Mex Fries
In this recipe, we used Oreida’s Golden Waffle Fries since they made great carries for all of the delicious toppings and were easy to dip into the cool and creamy ranch dressing, but feel free to use whatever style of fried potatoes that you like.
Fries (Part 1)
Start by preparing and cooking the plain fries according to package directions.
We placed a single layer of approximately 12 ounces or half a bag of frozen waffle fries in a large casserole dish and then baked them in the oven for approximately 10 minutes (or until golden) in a 450 degree oven.
While waiting on the fries to cook, we used the time to prepare ranch dip and pico de gallo.
Ranch Dip
To prepare the Hidden Valley Ranch Dip, combine one 16 ounce container of sour cream with one Hidden Valley Ranch Dip seasoning packet. Mix well and then place in the refrigerator until you’re ready to use.
*For best flavor allow seasoning and sour cream to set in the refrigerator for a minimum of 30 minutes or overnight. The longer the mixture stands, the better the flavor will be.
Pico de Gallo
Next, prepare the pico de gallo.
Mix: diced tomatoes, diced jalapeño, sliced green onions, minced garlic, and chopped cilantro.
Gently stir in ground cumin, lime juice, and sea salt.
Cover and refrigerate until ready to use.
Fries (Part 2)
Top cooked waffle fries with shredded cheese and crumbled bacon then return to the oven to heat until the cheese is melted.
Top the hot cheesy fries with pico de gallo and sliced jalapeño.
Serve with a side of ranch dip.
